Yesterday Domus Socolatae went to another gastronomic excellent company in the area: Angela Saba's cheeses.
Angela and her family have been "creating", for over 50 years, quality "raw milk" health cheeses, "without any added external enzymes". Right in the Tuscan Maremma, five-minute drive from Follonica, a gastronomic excellence near the Domus Socolatae!
This company has long since begun a collaboration with the Faculty of Agriculture of the Pisa University, aimed to "create" a "pecorino" capable of fighting "bad" cholesterol.
